Tobia Architects was selected to design the first location of Third Wave Coffee. The space is located in a busy area of downtown Toronto, near the intersection of King Street East and Church Street.  The design was guided by TWC’s four principles: People, Product, Process, and Planet, as well as a sustainable base, and the strong vision of TWC’s founder. Third Wave Coffee will use state-of-the-art equipment to prepare its product, used in combination for the first time in a coffee-making establishment. The equipment has custom finishes which harmonize with the interiors.

The thoughtful, simple design, integrated with original art work and highly functional brewing spaces, was created to receive guests to a welcoming environment. Suspended from the high open ceiling is an over-sized lighting ring situated in the centre of the space, representing a large ripple of water. Careful selection of materials include natural Canadian walnut characterized by its notable colour and heavy grain, and is the feature finish for the front counter and the window seating. Neutral, complimentary materials and colours in the space create a backdrop for the “Mother Nature” art piece.

“Mother Nature” represents multiple stories related to coffee: its geographic origins, plantation, history, tradition and culture.
